How Tomato Juice Before Meals Affects Blood Glucose
If you're concerned about post-meal blood glucose, consider a simple change: a glass of tomato juice before your meal.
Postprandial Glucose Response
Postprandial glucose response describes how blood glucose levels change after eating.
After consuming carbohydrate-rich foods, blood glucose levels can rise rapidly.
Why It Matters
A rapid increase in blood glucose may be followed by a decline, sometimes leading to fatigue. Over time, repeated fluctuations may influence metabolic health.
Maintaining more stable blood glucose levels is therefore an important consideration.
A Simple Approach
Drinking a glass (200 ml) of 100% tomato juice before a meal may help support a more gradual rise in blood glucose after eating.
Our Study
We conducted a study with healthy women in their 20s. Participants consumed either tomato juice or water (control) 30 minutes before a meal. Post-meal blood glucose levels were then measured.
What We Observed
Participants who consumed tomato juice before the meal showed a more gradual increase in blood glucose compared to the control group. Peak levels were also lower—by approximately 27%.

These findings suggest that consuming tomato juice before a meal may support a more stable post-meal blood glucose response. Tomatoes are also a natural source of phytonutrients such as lycopene, which have been associated with potential benefits related to insulin sensitivity.
Things to Keep in Mind
· If you have a medical condition or are taking medication, consult a healthcare professional.
· Choose 100% tomato juice with no added sugars.
